Around 1985 and later you saw lots of marigolds growing in the north as it was promoted by various companies like AMF in Chiangmai to produce quality flower seeds for export to other countries. Nowadays you don't see it often anymore but apparently it still seems to be common around the place you are riding at the moment.

The burning of sugarcane fields is almost always by design as it removes (burns) all the dead leaves, weeds, etc. as well as that snakes, scorpions and other insects in the fields are driven away making it easier and safer for the workers to manually harvest the cane. In addition it increases the productivity of the workers to a great extent.
