Sorry I wasn't sure if this post should go in general discussions or the Border/Red Tape section.

Anyways the question is pretty much the what it says in the title: Is it legally possible to take a Vietnamese registered bike and sell it in Thailand?

I don't think I'll have the time to make the return trip.

We've had people sell foreign reg. motorcycles in Thailand that are on a Thai temporary import. The easiest way to unwind the paper work is to go to the international border with the new owner and explain to the Thai Customs officer what is happening. Often with an official looking bill-of-sale the Thai customs officer will then re-issue a temporary import for the new owner, you may also need a "power of attorney" letter authorizing him to use the bike while registered in your name.
